yummy rainbow cookies

Actually, the recipe calls for chocolate chips, after all, it is a chocolate chip cookie recipe. But I don't have chocolate chips so I used rainbow coloured candy coated chocolate bits.

Here's the recipe:

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips (or in this case, candy coated chocolate bits)

Directions:
Preheat oven to 325 degrees.
Sift flour, baking soda and salt; set aside.
Cream together melted butter, brown sugar and white sugar until well blended.
Beat in vanilla, egg and egg yolk until light and creamy.
Mix in the sifted ingredients until just blended. Stir in chocolate chips by hand using a wooden spoon.
On a baking sheet, drop spoonfuls and make sure they are at least 3 inches apart.
Bake for 15-17 minutes.

Makes 24 cookies.

I think I need a tall glass of milk!

train cookies

It's rainy in Toronto. Actually it's been rainy the last couple of days, but it seems almost childish to complain about the weather when you hear disastrous news on the other side of the world. Sincerely wishing many people are safe, or at least would be safe soon in Japan. Meanwhile, I spent the whole day making train shaped cookies.
Here's all of them.

How's your day?

Ice Fest at Yorkville and some other stuff...

We had a free half weekend so we decided to visit the Ice Fest at Yorkville. Too bad we missed the actual ice sculpting competition. Aren't ice sculptures cool?? I'm pretty sure A thinks this one is special =P (Fact: A loves watches)
Photo op! Can't be sad about winter all the time =)
 Winter wonderland!
A hanging out with his peers. Haha (just kidding, babe)
Isn't this huge smile just perfect in the middle of these beautiful winter trees? (yes, that was me in the background)
and another one. It was perfect weather! =P I wish I could pose like a real model would instead of this half-smile I was sporting. Grrr!
 I didn't know about this, I swear.
And this, but good job, baby =)
Anyway, after we got bored, we went home and baked some cookies.
and yes, we got crazy so we made more....
Anyone want some??

love, love, love...love!

Weeks of listening to Sara's Gravity and JM's Heartbreak Warfare, well, what do you expect? I was depressed as hell! (what does that actually mean?? haha...so typical of me =P). Anyway, I'm glad to announce the depressing air has lifted, thank God to Sara's feel good song, Bottle it up. Go ahead. Have a listen.

See...what did I tell you? Do you feel better already? I do! Learning to play this with Taylor has been fun =)
Anyway, here are some things I've been doing the last couple of days...
This is salmon, pan seared in butter and garlic. Didn't I mention before how much we love salmon? But why stop there. I had some tiny scallops I've been meaning to use and what better way to cook it but as a side/saucy type dish thing. Anyway....I made gravy from the juices of the salmon and garlic and butter (add a quarter portion of a chicken cube and add a little bit of flour, stir with a whisk and voila!) and cooked the scallops in it. The result was this =)
Wedding cookies! I couldn't very well stay with one simple design. I tried, I really did. But I get bored of the normal things and decided to add more colours and styles and this is what I got. Can you guess which one I originally wanted them all to be? It's the most similar style =p
And my first time working with fresh boutonnieres. Aren't single cream roses so elegant all on their own??
I'm loving a new font family, I'm sure you can tell =P But no, I haven't abandoned my original font family! This one was called Hannibal. How bizarre?!

It's the three month itch and though, we cannot afford to travel anymore (no more vacation days + $$$) but the best thing about checking out travel websites is----it's free =P No charge for dreaming! haha! I am one obsessed travel planner! But seriously, if there is one place in the world you can go to, where money is no object and you never have to worry about booking time off work, where would you go?
I would go here...
Greece
Vienna, Austria
Venice, Italy
Paris, France
Sorry, no photo credits for these amazing pictures. I found them randomly through GOOGLE IMAGES.

Funny, I said one and yet I posted more than that. Again, dreams are free!

the cookie project

I guess it pays to practice baking cookies especially this time of the year. I had to make 8 dozen cookies and planning for their presentation was a pain. But I had so much fun even with a mangled finger (check last post). This is the cookie project I thought would never end!
A twist on classic shortbread
All wrapped and ready to go =)
Sorry, I can't get enough. I love these wrapped packages!
And of course, I had to make some decorated sugar cookies as well
This came about by accident. I had tinted cookie doughs without really planning what to do with them. I had these clear boxes and I thought, what better way to pack them than stacking them into a tree-like (more like cake-like) form. They are also less sweet than the other batch of sugar cookies I made so the cream cheese frosting in between was just perfect.
Again, excuse my love for good packaging. Won't these look cute as wedding favours?? Imagine them in white, or better yet, pink and chocolate =)
After much deliberation, here's the final Thomas the tank engine invites in cream-coloured lined linen envelopes.

Thanks August Empress for the cool background!
